Infused Olive Oil

It is easy and much cheaper to make your own infused olive oils! It is a fun way to add flavor in a new way to your dishes. You can infuse oils with your favorite herbs and spices, or even different peppers. They should last on your counter for about a month, some may last even longer.

Recipe adapted from: Scott Conant:

1 cup olive oil
1 bunch fresh basil leaves
10-12 cloves garlic, crushed, or sliced for even more flavor.
1 tsp red pepper flakes

Heat the oil and flavoring ingredients over super low heat for about 30 minutes, or until it starts to boil. Another good sign that you have leeched all the flavor into the oil is brown garlic. It will appear cooked and brown when the oil is finished! Strain out all the ingredients, and keep in a squeeze bottle to use in every day cooking.

Side note: DO NOT keep  garlic cloves in the oil at room temperature. Ever!!
