Homemade Biscuits and Gravy

Who doesn’t love biscuits and gravy on a relaxing Saturday morning? These recipes are both simple, and delicious. It made for a hearty and fairly quick breakfast when paired with scrambled eggs and hash browns. Yum.

Cream Biscuits:
Recipe from: Smitten Kitchen
Makes 10-12 biscuits, less if using a larger biscuit cutter

2 c AP flour
1 TBSP baking powder
1/2 tsp salt
1 1/4 c heavy cream
3 TBSP melted butter

Preheat your oven to 425° and get that butter melted! Next sift all your dry ingredients into a bowl. I skip the sifting, and whisk my dry ingredients together. Next fold in 1 1/4 cups heavy cream. If the dough is not soft and workable, add heavy cream 1 TBSP at a time until soft. Roll, or press out your dough with your hands until its about 3/4″ thick. Cut into 2-3 inch rounds, or really whatever sized biscuit you’d like, the yield would simply vary. Brush liberally with melted butter, and place on a parchment lined baking sheet.

Pop those babies in the oven, and they will be ready in about 12-15 minutes!

While your biscuits are baking you can start your gravy! I also made some scrambled eggs and hash browns to go with this, so I started these things then as well.

Sausage Gravy
1 lb ground beef
3 TBSP flour
2 1/2 c milk
salt and lots of black pepper, to taste

Brown the ground beef over medium heat, and transfer to a bowl with a slotted spoon: saving all the fat in the pan. Turn the heat down to medium low, and add 3 tablespoons of flour and stir frequently. Let the roux brown for about a minute, this is to cook the flour taste out of the gravy. You could use any type of ground meat you like in your gravy, or even bacon. Leaner ground meat like pork will give off less fat, so a smaller amount of flour should be used. Next add the milk, whisk to combine, and turn the heat up to medium-high. Let boil until thick and gravy-like, whisking often. Add the ground beef, and season to taste with salt and lots of cracked pepper. Spoon over warm biscuits, and serve with your favorite breakfasty things.

The biscuits were also delicious with butter!
